Merry Christmas and Happy New Year!

I'm very proud to announce that this year, a bunch of PA families will be very happy with the backpacks that will be going home with their children.  The grant came through and Blessings in a Backpack will be receiving funds to aide families in need. Thank you Lord! 

Merry Christmas and Happy New Year Everyone! As "2012" comes to an end I find myself looking back at the past year. Our family has been through alot of changes, some good and some bad.  As I reflect this year as Mrs PA, I can't help be thankful for the people I have met over the last few months. I appreciate each and everyone of you! Thank you,  for your support and allowing me to share your recipes and friendship.  You all will always be a friend to me and my family. 

With the approaching of "2013, I have to say that those tons of Christmas cookies and chocolate carmel covered apples I've made and consumed in the last few weeks have "not" been on my side, but.....to be honest I'm happy to sport those extra few pounds, because weight does not define someone!  As I approch the end of my rein in March, I decided to devote my time helping others as a "secret". ( so if anyone knows of someone that is in need, please send that name my way)  My husband and I are teaching the youth today to do just one thing special for someone without telling them. This could include holding a door open for a stranger, calling a friend,  taking an elder grocery shopping or simply saying a small prayer for a person.  If we all just say something nice about soemone and not judge them, think how much better it would make one's day!  I may be a country girl , but guess what, I'M PROUD OF IT!

Good Morning Everyone~

     Happy Friday! I'm trying to keep up with my blog pages when I find some extra time. Today I have a few minutes.  I can't believe it's August already, where did this Summer go?? Soon the leaves will begin to fall, reavealing the most beautiful time of year in PA, Fall!

Last weekend was so much fun, the Barnstorms game with the Arthriris Foundation.  Shickshinny Car show and town benefit. It was so much fun to judge the car show. (I learned from my husband to "NOT" touch the shiny cars! Thank you to all the enteries for being SO kind and letting me sit in your cars and touch all the shiny parts!!( LOL ) Next weekend at the SUPER CAR show in Harrisburg I "WILL NOT" touch the cars!;)  Sunday was the Pocono NASCAR race. Sadly a fan lost his life.  My thoughts and prayrs are with the Zimmerman family for their loss.  The positive was that the NASCAR Foundation was able to raise more awareness and funds to help more children and families in need.   I'm a huge fan of the NASCAR Foundation and the wonderful group of employess and volunteers that help in so many ways!

I met so many amazing women from all over the nation.  After finding myself asking the question, "what in the world am I doing her"! HI Everyone...Sitting here at my desk thinking of something to blog about I can't help but think of these words; " Only God Knows Your Journey"!    I was at a local event a few weeks ago and a woman came up to another woman and said; "I wish I had your life"!  A few things we need to nip in the bud.  At the end of the day...we "All" have bills to pay,  have "responsibility", and no one knows any one's life, expect for that  person.
Sometimes we lose faith in friends and family because they've let us down.  Disappointment can weigh very heavy on one's heart! We are all human and we are all on this journey together.. regardless of what you have and don't have in life!

I guess what I'm really trying to get at here is we shouldn't judge others and we shouldn't want something we don't have. When you want something in your life that isn't here yet, consider this. You will still be you when it comes. You will still be you every moment if you spend your whole life waiting. Do you like who you are? Do you like how you're meeting life (meeting yourself)? NOW holds all you need to get ready for what's coming next. NOW holds all the life you'll ever have. Quit asking, Are we there yet? Ask, Am I showing up how I want to? These are the true words of a very good friend of mine. She has taught me so much about being in the moment. Although it seems hard to believe, sometimes not getting what you want can be a blessing in disguise.;-)

Blessed are the little things in life, for they have the power to keep us going when we don't think we can, until then...we shall all eat "red-velvet cupcake's"!!!!


                                    Red Velvet Cupcakes

  • 2 cups all
  •  purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1 teaspoon of salt
  • 2 Tablespoon of unsweetened, cocoa powder
  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 eggs
  • 1 cup buttermilk
  • 2 teaspoon of vanilla extract
  • 1-2 oz. red food coloring
  • 1 teaspoon of white distilled vinegar
  • 1/2 cup of prepared plain hot coffee (don’t skip this ingredient)
Instructions:
  1. Preheat oven to 325.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cocoa powder and salt. Set aside.
  3. In a large bowl, combine the sugar and vegetable oil.
  4. Mix in the eggs, buttermilk, vanilla and red food coloring until combined.
  5. Stir in the coffee and white vinegar.
  6. Combine the wet ingredients with the dry ingredients a little at time, mixing after each addition, just until combined.
  7. Generously grease and flour two round cake pans with crisco and flour.
  8. Pour the batter evenly into each pan.
  9. Bake in the middle rack for 30-40 minutes, or until a toothpick comes out clean. Do not over bake as cake will continue to cook as it cools.
  10. Let cool on a cooling rack until the pan are warm to the touch.
  11. Slide a knife or offset spatula around the inside of the pans to loosen the cake from the pan.
  12. Remove the cakes from the pan and let them cool.
  13. Frost the cake with cream cheese frosting when the cakes have cooled completely.

Good morning everyone!

I wanted to take the time to blog a few things!  As the weeks start the count down to the Mrs International pageant, I'm shifting into high gear.  


This is my very first national pageant and I'm so excited to meet so many amazing people!

My pageant prep has gone a bit like this, lots of working out, and eating healthy.  That's really the hard part! LOL  Working on my platform and job have been very easy!  Those of you who know me, know how much I love to cook and feed people.  The last few months, have been open to just about anything.  Cooking on the beach in Florida,  to making veggie burgers on the highest mountain in PA! LOL   We can't forget, delivering a giant welcome Summer snack "table" to families who are in need! I sat in the children's classroom crown and sash waiting for them to come in after recess and when they walked in and saw me sitting there with all those snacks....they were SO happy!! Since I have been blessed with the title of Mrs Pennsylvania International, I jump on every opportunity I can to let the children know that I'm someone who cares about them and their family.  Our society is so face paced and we need to stop and take a minute to let people know, "I'm here,and care and want to help"! The joy on the faces of children and their families when you give them food, or teach them how make a certain food, is absolutely priceless!   Give a man a fish and you feed him for a day. Teach a man to fish and you feed him for a lifetime.   I know, this is going to be on my grave stone when I die, because this is my motto in life, I say this 50 times a day! (but it's SO true,  my dream job, would be to travel the world feeding and teaching as many people as possible  how to fish (cook)!!!


In the next few weeks, I will be heading South  to host a supper club at Viking, Lakewood Ranch center, and can't wait to see so many of my friends, and family!  The menu, as follows:

Hello Everyone!

I'm officially back to my blog page! I was having some issues with my web address, but now I'm back to blogging.   So much to blog!!! 

I am so blessed, to be able to travel and promote the Blessings in a Backpack organization. ( not only in PA, but all over the US)  These last few weeks, It was a joy to be able to visit so many organizations and be able to cook with the children and spend time with their families.  


The last few weeks have given me many opportunities to help within the community and nation!

Saturday, April 28th was the Celebrity Basketball Game and Slam Dunk Contest signature fundraising event for the Clifton R. Lewis Good Life Foundation. Held annually at GNA High School in Nanticoke PA, the event attracts professional athletes, celebrities, musicians and spectators from all over NEPA and across the country. 
They play to raise important funds that go directly toward helping families with Muscular Dystrophy live a better, more accessible life through special equipment, accessibility assistance, funding for research and the Dream Creator. Last year’s event paved the way to help 12 families and make 2 special children’s dreams come true! It was great to meet Steve McLendon, Kenny Dobbs, Todd Bodine, Darnell Stapleton, Chad Szeliga, Carlos Smothers, Josh Seibert, Roscoe Johnson Jr, and most of all Cliff Lewis and his family. The the founders of the Lewis Foundation.  Inspiring to see all the great things they do for so many families.  

This week we were in Savannah, GA visiting the restaurant of Mrs Paula Deen, the food was great and Toni was a gem! I made sure I purchased a few cook books before leaving.  These signed cookbooks will be raffled off at our Blessings in a Backpack fundraiser the end of June!  

Our trip to Florida was the best, my sister in law was married on a beautiful island in  Florida!  It was SO much fun.  We had to take a water taxi to the island and leave behind our cars, driving golf carts around most of the weekend! I will say, it was  nice to detach with our family for a few days!  Sunday was Mother's Day, and most of you know, my husband doesn't cook much! Well......He and my Father in law,  made a wonderful diner with spaghetti, salad and garlic bread!!  ( my Father in law doesn't cook either!) It was a great meal and we were all impressed.  Job well done!!!

We were also educated on down home Southern cooking! YUM, I love the smell of beef brisket. Did you know you can feed about 12-15 people on one brisket.  I'm going to check this out! This may be one for the recipe book!  

Tomorrow is a "Zumbathon", at the Northwest Intermediate School, Mrs Axtell is heading the Zumbathon! She is a teacher at the Intermediate school and Zumba instructor.   All proceeds will go to Blessings in a Backpack!

Another fun event is the Blessings in a Backpack chopped competition, between staff at Northwest Area! I can't wait to see what's "Created" with these foods in the backpack! This is a fun, yet educational experience for the children  to see what's really in those back packs, and what they can contribute to them as well.  


This weekend will be the Harrisburg  Senators game.  A few weeks ago, my sister queens and I did a walk for the Arthritis foundation, at Pennsylvania State University, Altoona. 

I met Suzanne Sheaffer,  her daughter passed away this year, after being diagnosed with dermatomyositis. Which  is a connective-tissue disease.  Suzanne's goal is raise as much community awareness and early recognition nationwide!  Through her research and discussions with the myosotis and arthritis foundation .  

You would never know,  how devastating arthritis can be to children as well as adults. Did you know that in 1984, Ricky Bell  A pro NFL player died from dermatomyositis,  Their are so many stories like Sarah and  Ricky's.  I want to help Suzanne with funding this awareness.  Suzanne is going to be speaking at the Senator's game, and the memorial picnic on Sunday, May 20th heading a balloon launch in Sarah's honor. .  I know as a Mom, it must be very hard for her to do this, but I will be there to support her as she takes a stand against arthritis.

I wanted to be sure to take the time to blog this morning.

 I'm SO excited to be traveling to so many schools this week in our local area!! I'm taking this time to bond with family and friends.  So many people are always asking me, "What can we do to help you"!  Well, if you happen to be one of those people......I'm going to utilize you!! LOL   It may be packing backpacks, making foods, or handing out information.  I appreciate all the help,  and can't wait to add more and more schools to the Blessings in a Backpack program.  (locally)

Fruit Salad, request

    Hi Everyone!



        Thank you for reaching out to me for "cost less" recipes.  I'm so happy to share this fruit salad recipe.  This is great for the warm weather approaching us.

The emphasis for this recipe will be the apples.  This is what gives the salad crunch and flavor! Choose your apples wisely!  Remember, there are so many varieties out there.  (leaving the peel on, not only adds color, but it adds fiber as well!)




  • 3 apples, cored and cubed
  • 1/4 lb. seedless grapes, washed and removed from stems
  • 1 banana, peeled and thinly sliced
  • 1 8-oz. can pineapple chunks canned in juice, drained
  • 1/4 cup chopped walnuts
  • 1 tsp. honey
  • 1-1/2 cups low-fat vanilla yogurt

In small bowl, whisk together honey and yogurt. Place rest of ingredients in large bowl, pour yogurt mixture over all, and toss to mix well. You can serve it immediately, or cover and let stand for 20 minutes in refrigerator before serving. You can also  toss a small amount of trail mix over the top.  I love to eat this right before a hike or long bike ride!

Healthy Foods, list




I'm trying to put together a summer cost-less "wellness" program.  After doing some research on fruits and veggies, I wanted to share some great facts with my readers today! 
I hope you find this useful, and as always feel free to drop me a few lines!

No matter where you live, you can find some great  foods—which also happen to be good for you. I'm providing a  list of some of the things you'll find in the produce aisle of your grocery store, or in your local farmers' market. ( Remember the local farmer's market's will be opening soon, let's show our local support as much as we can!) 

Apples  Different varieties come in season starting in mid- to late summer and right on through autumn. Be sure to eat the skin to get the best health benefits. ( I love honey crisp apples!!!) 
1 box of strawberry jello, 2 honey crisp apples a hand full of walnuts and a can of crushed pineapple is all you need to make a great healthy snack!!  
add 1cup of hot water to the jello mix add, walnuts, apples (diced) and pineapple!
refrigerate for two hours and enjoy!! 
Apricots  Originally from China, apricots are not only delicious, but they're also a great source of vitamins A and C, as well as potassium. Look for fruits that are plump, firm, and uniform in color.
  • Avocados  Though their seasons vary, summer is a good time to find ripe avocados in your local stores. High in monounsaturated fats, they also contain vitamins A, C, D, E, and K, plus a couple of those B vitamins.
  • Basil  Summer is the best season to enjoy this aromatic herb—a great ingredient to liven up pastas, sandwiches, or salads. ( there  is something about "fresh" basil in sauce.)
  • Blueberries Rich in antioxidants and phytonutrients, a handful of these babies are great when you toss them into a low-fat smoothie or on top of some yogurt for a nutritious snack! Yum, Chicago prep!! 
  • Carrots  Not only are carrots good road-trip snacks, they also have pro-vitamin A carotenes that can help reduce the risk of heart disease.
  • Chard  Like spinach, chard is low in calories and contains phytonutrients including syringic acid, which inhibits carbs from breaking down into simple sugars, thus warding off issues like diabetes by keeping blood sugar steady.
  • Cherries Cherries are high in vitamin C and potassium, and if you go pick them yourself, you'll get the additional benefit of some good old-fashioned exercise. ( warning do not bring hungry children, you will be up all night!!!!, trust me on this one!! ;-)
  • Corn A summer staple, its folate and B vitamins can contribute to improved cardiovascular health. (locally grown in our area!) 
  • Cucumbers  Cucumbers are great for your skin, muscles, and connective tissue, plus they're full of water, fiber, and vitamin C.
  • Eggplant The beautiful purple skin found on these late-summer vegetables is good food for your brain.
  • Fennel  This Mediterranean bulb is rich in vitamin C and phytonutrients, especially anethole, which have showed to have some anti-cancer effects.
    • Figs  Fresh figs available during the hot months are a great source of potassium, which can help lower blood pressure.
    • Garlic  Volumes have been written on the benefits of this stinky bulb, which include how good it is for heart health and how its antiviral properties may be able to help keep us from getting sick.( I swear this was a daily "vitamin" in our home growing up!!!) 
    • Grapes Great for snacking, they're low in calories and contain the heart disease-fighting phytonutrient resveratrol, normally associated with red wine. (remember never pass up those Muscadine grapes, (Vitis rotundifolia)
    • Green beans   Steamed  these are great  crisp vegetables for a healthy side dish that's filled with carotenoids, which are great for your heart and more.
    • LemongrassUsed in Thai and Southeast Asian cooking, this citrusy herb is high in folic acid and has been shown to have antioxidant and disease-preventing properties. You can purchase lemongrass juice frozen in the health food isle of the grocery store! ( this is a family favorite!!) 
    • Lettuce  Not all greens are equal, so go for the mixed greens, romaine, or red leaf lettuce for the best benefits in your salads. 
    • Mangos Though higher in calories, one cup of diced mango can provide 75 percent of your daily vitamin C recommendation. Great for helping out the immune system of right before boarding a plane! -:)


My Sister

What a great week!! 

 I'm filling my calendar and looking forward to reaching as many families as possible! 

I just wanted to start my blog out today, making sure I thank on more person, my sister!

The last 35 years I have had the pleasure to live my life with someone I call my "sister"!  We have shared SO many hugs and tears!!  My big sister has always been there by my side to protect me and guide me.  She has a way of making me believe in myself that she doesn't even know! 

My sister has always been a role model that I look up to, and I am so thankful and proud of my sister!! 
I love you, Mich!

Thank you!

I want to reflect this time to say; "Thank You" to everyone for supporting my dreams!  Gary, you are my true soul mate and I love you SO much for being on my team.  You are my biggest supporter and I can't tell you how much I apprecite tht!!!!  Maddy and Gary, thank you for helping Mommy get ready!!   Mom, Dad, Diane and Pam thank you for your support!!    Suzy Bootz, Thank you for all your help and Competitive Image, Thank you for all your help! Joey, you have the best taste and Clay you are a true artist, I love my photos!!!  Thank you team Cessna for all your hard work and my sister queen Dawn Hicks!! You are amazing and I'm so proud of you for all you have done for our country! You will always be a true hero to me!-:))

  I am so happy to hold the title of Mrs. Pennsylvania International 2012!! WOW, I'm overwhelmed by all the  congratulatory notes and well wishes!!  

I have a lot of work to do in the next year, and can't wait to get started! 

This weekend, was one amazing weekend!  It was a pleasure to meet and spend time with the most talented ladies that shared that stage with me!  Jill, Kathleen, Danella, Sara and Teena  you all are amazing women and it was a pleasure to spent the time with each and everyone of you!

cooking and teaching!

Hi Everyone,

It was a long day today, but feeling very excited about so much. My day started off to a rough start, but all and all it worked out!

I was so happy to be invited to the set of WBRE, NEPA live today.  I made "cost less" meals to show families you can make healthy foods for less.  I was able to share some information about the "Blessings in a Backpack Organization"! I can't tell you how much I enjoy feeding children!

 I brought the biggest food critics I know, to "taste test" the food!  My two children, Maddy and Gary! I think the chicken passed and to my surprise,  they gave the chicken salad a thumbs up as well!   I made the "cereal" chicken recipe that I wrote for my column this week.  It was simple and  cheap to make! If I am honored to hold the title of Mrs Pennsylvania International, this will be one of the recipes show cased in my cook book!

I'm getting very excited about the next few days, I can't wait to see everyone again!  I'm so excited so many of my friends and family are coming to cheer me on! My team of supporters, I don't know what I would do with out all of you!  The old saying, "It takes a team",  I'm so very proud of my team!! !

weekend blog

Hi Everyone,

I'm taking the time to blog a few lines.  This past week, was filled with SO many things!  It was great working with WNEP's Ryan Lecky and  friend, Chef Randy.  We made meatless meals for the Lenten season,  and took over the West Side Technical School.  This was the very first time visiting this school.  I have to say I was very impressed by the students and staff!  (thank you, Stanley and Katelyn)

I also did another presentation for Blessings in a Backpack. I'm working on a program that will help blessings  families throughout the summer months. Information coming soon!

Lastly, still working on a few alterations for the Mrs Pennsylvania International pageant.  It was so nice to attend the Mrs New Jersey International pageant Saturday, with Maddy and Cheryl.  Congratulations to all the new title holders!  All of the girls were truly amazing! It was great to see everyone from last year and the new contestants that will be competing this year.

Creating Your Own Life

Sometimes people come into your life and you know right away that they were meant to be there; they serve some sort of purpose, teach you a lesson or help figure out who you are or who you want to become.  You never know who these people may be; your roommate, neighbor, professor, long-lost friend,  or even a complete stranger who, when you talk with them, you know that very moment that they will affect your life in some profound way.

Sometimes things happen to you and at the time they may seem horrible, painful and unfair, but in reflection you realize that without overcoming those obstacles you would have never realized your potential, strength, willpower or heart.  Everything happens for a reason.  Nothing happens by chance or by means of good or bad luck.  Illness, injury, love, lost moments of true greatness and sheer stupidity all occur to test the limits of your soul. 
 
Without these small tests - whether they are events, illnesses or relationships - life would be like a smoothly paved, straight, flat road to nowhere.  Safe and comfortable, but dull and utterly pointless.  The people you meet who affect your life, and the successes and downfalls you experience, create who you are; even the bad experiences can be learned from.  In fact, they are probably the most poignant and important ones.

If someone hurts you, betrays you or breaks your heart, forgive them, for they have helped you learn about trust and the importance of being cautious to whom you open your heart to.  If someone loves you, love them back unconditionally; not only because they love you, but because they are teaching you to love, and they are opening your heart and eyes to things you would have never seen or felt without them.
 
Make every day count.  Appreciate every moment and take from it everything that you possibly can, for you may never be able to experience it again.  Talk to people you have never talked to before, and actually listen.  Let yourself fall in love, break free and set your sights high.
 
Hold your head up because you have every right to. 
Tell yourself you are a great individual and believe in yourself; for if you don't believe in yourself, no one else will believe in you, either.  You can make of your life anything you wish. 
 
Create your own life and then go out and live it.

My weekend

Hi Everyone!


 I wanted to take this time, to share a few words about my weekend!  


Friday,

I was a guest on the Jeff and Amanda 98.5 KRZ show.  We talked about "Blessings in A Backpack" and competing for Mrs Pennsylvania International.  It was SO much fun!!  I know that Blessings in a Backpack was able to raise a large sum of money, as people texted in pledges!   (Thank you, Everyone for supporting  Blessings in a Backpack!!)  


Friday night,  we went bowling with my entire family!!  It was a blast, we had a great time!


Saturday,

Gary and I attended the American Heart Association Ball. (I wore a dress that I made a few years ago.)   We had the best time!!  It was an honor to be invited to represent such a great cause.  
The support that was given to me for competing for Mrs Pennsylvania International was "amazing"!  Thank you again, American Heart Association for the pin and flowers!! ( I will wear my pin proudly.) 


Sunday, 

 I would like to start with "Happy Birthday, little Gary!"  We had a great day!  It started off with an early morning run with my hubby, church and little Gary's Birthday dinner!  It was nice to see that little Gary enjoyed his day!  It was so funny to watch him open his presents, and receive his new dirt bike (with strict instructions).   He's been riding since the age of five, but I still worry as a Mom!   


Sitting here in my over sized chair,  just me and my thoughts.  I can't help thinking how great this weekend was.   I am surrounded with love!!   A husband, children, family and friends who are so special!  God bless you all,  I love each and every one of you!      A card by itself is never enough to express love and joy brought to me by each one of you!  


I'm not sure where this road will take me, but I know deep down inside, I'm truly thankful to have each and every one of you right by my side!!  XOXOXO

Peanut Butter Chicken!

Hello,  Everyone! I'm trying to keep up with my blog as much as I can.  I will be honest, I'm super busy but very thankful!!   I had a ton of deadlines to meet, and finally finished (most) of them early this morning! lol

As I sit here, starting to blog, thinking of what I would like to share the thought of chicken peanut butter tenders comes to mind! lol

Most  morning's, I get the same question. "Mom, what's for dinner tonight"?   Today, I received a request!
"Mom, can we have peanut butter chicken tonight?" LOL

 I also wanted to share this recipe today, because it's one of my favorites too!!  ( I love to pair this up with a "special" sauce!)


Peanut Butter chicken Tenders
1/4 cup water
1/4 cup peanut butter
1 tbsp brown sugar
1 tbsp lemon juice
1 tbsp lime juice
1 tbsp soy sauce
2 clove's of garlic, minced
1/2 tsp of fresh ginger root
4 boneless skinless chicken breast halves
1 tbsp sunflower kernels

The "special" Sauce

1/2 cup of grape jelly
1/2 cup of raspberry jelly
1tsp cinnamon
1/2 tsp pumpkin pie seasoning
combine all ingredients in a small sauce pan, until reaching a boiling point.  Pour grape mixture over chicken or serve in a small ramekin.


1.) In a small sauce pan, combine water, peanut butter, brown sugar, lemon and lime juice, soy sauce, garlic and ginger.  Cook and stir over medium-high heat for about 4-5 minutes or until smooth. Remove from heat and set aside.

2.) Slice the chicken lengthwise into 1-in strips; thread onto soaked wooden skewers. Grill uncovered, over medium heat, about 5 minutes . Turn and brush remaining sauce on other side until the chicken is no longer pink inside. (remember chicken is done at 165 degrrees)
 







Chicken Salad

Hi Everyone,
Today, I wanted to be sure to post something on my page, before I forget.

 Shopping in the grocery store yesterday, I ran into a very nice lady.   I was looking for tarragon, she was looking  for parsley.  I know this sounds funny! lol  We started talking about cooking and how to make chicken salad.  I told her, I would blog my chicken salad recipe.  

Kim's Chicken Salad 
1 lb boneless  skinless chicken breast, grilled
1/2 cup of mayonnaise
1/4 cup chopped red onion
1 1/2 tbsp. tarragon
1 tbsp cilantro
1 tbsp sugar
1/2 cup of white grapes

Marinate for the chicken:
This is a great salad dressing too!

1/2 cup of extra virgin olive oil
1/4 cup balsamic vinegar
1 tbsp raw honey
2 cloves of garlic
1 tbsp lemon juice
1 tbsp Dijon mustard ( I use honey mustard)
marinate  chicken overnight.

1.) grill chicken,  (chicken is done when the internal temperature reaches 165 degrees)
2.) combine mayonnaise, red onion, tarragon, cilantro, and sugar.
3.) Slice and cube chicken, fold into the above, and add grapes.

I garnish this dish with a side of grapes and fresh mozzarella.

Hello Everyone!!!!

It's been a few days since my last entry.  I have been very busy with my job and, preparing for the Mrs Pennsylvania International  pageant!  For those of you just logging into my sight. I'm a Food writer, for a local newspaper that reaches over 43,000 people daily. I also work for the Viking Culinary center as a  Chef instructor and volunteer a lot of time with  Blessings in a Backpack Organization. Traveling to as many schools, as I can throughout Pennsylvania.    You may also, be looking at my photo saying, "Why does that girl look familiar"?  
Well.....You may have seen me on television;)

This week has had it's shares of "hectic" deadlines, and tons of meetings, but I'm happy to report that I only have a few more tasks to complete and it's Friday!

I'm looking forward to the weekend:)

Friday, It's date night with Gary.  Maddy and Gary are both staying over a friends house, so we are taking advantage of a date night!! We are having dinner at a great place, Vino Dolce.   The food is "ambrosial"!  After that, we are going to see "Big Miracle", I have  been wanting to see that movie:)  (yes, I'm sure I will eat all Gary's popcorn and end up crying, but that's what makes us all "real". lol  

Saturday; We are going back to the B&B ( for the fourth time)  we have our hearts set on!  This is an old farm on 20 acres, which has no current life right now,  but....we/I see the potential there!  Gary, I believe, is seeing  lots of dollar signs, but I see a "diamond in the rough".  You know when your married to your true "soul mate" when you look at a home and your husband says, "no way"! You say, "I love it", and his response, "If it's your dream, we'll make it happen"!
 This would be our first ever B&B, but I know,  it's a true calling for our family.  When I say family, that means everyone of you as well!  If you were to visit our home right now, I assure you that you will not leave hungry and you most likely will be leaving with a Kimmy bag! lol  

Sunday; I'm going to visit a friend of mine, I haven't seen in a while.  She is truly "amazing"!! I can't wait to catch up and share some of my favorite desserts with her!

Good Morning Monday.....

    Today is President's Day, most children and government employees are home today.

   As I sit here blogging and "acting" my part as "dogie parent",  bringing my Greyhound to the Veterinarian!
(yes, Maddy is playing Veterinarian again).  The common complaint of my dog is.......She has a rare case of the "Winter blues".  lol   Little  Gary's cat has a case of not getting enough space on the couch, because the dog hog's it all!!! humm, now that's funny! It never seems to amaze me that my children's feelings filter through  the animals!!  lol  I say, the solution to this problem will be:
We first make Mickey Mouse pancakes! (they both "love" Mickey Mouse pancakes, why doesn't?)

         A.) The greyhound get out and about more. (Maddy)
         B.) The cat realize, that he is loved just as much as the dog!  (Gary)
         C.) We are grabbing our ice-skates and heading for Scranton.  Today is not only a day to honor our president's, but it's a day to honor the extra time we have with our children as well! 

I will be checking in later with the results of this "healthy" diagnosis!! (perhaps some photos, if I can stay up long enough(:

Blessings and the true meaning of "love".

  Hi Everyone!!  Many of you  know me in so many ways. 

Today my blog is not about me.  I'm dedicating my blog to my daughter Madison Lynn.  To be honest,  the last few months have been a bit hectic for our family and it seems like time is so sacred!!

I'm competing for Mrs Pennsylvania International again.  Volunteering with; Blessings in a Backpack Organization, traveling to Florida with my job, working on my food column, owning a small cake business, traveling with Annabelle, (my therapy dog) doing apperances and teaching the art of culinary cuisine to half of America!!   ( Thank you, Lord!)

  But....This weekend has been one I will never forget!  My daughter, Madison wanted to make a difference in the lives of other children. She saved her own money, purchased a ton of books, crayons, stuffed animals and  big beautiful stars!!!

I asked Maddy, what the stars are for?  Her reply; "Mom, they are for these brave children who I feel are the true stars in life"    WOW!!!   Those are some powerful words to hear from your daughter, and the funny part of that is....I didn't tell her to say that!!

Madison and I walked into the Geisinger Children's Hospital, She was wearing my Mrs. Beauty, Brains and Heart sash.  I was wearing my Mrs Shickshinny International sash and together,  we walked hand and hand, bags and bags!  Delivering a little bit of Sunshine!  I will say, the amount of light in the eyes of those children would light your world a lifetime!!   

This is now a monthly "girls" day we have scheduled, regardless of how hectic life can be!
